This Wush Wush is unlike any coffee we’ve ever tasted. Named after the area of Ethiopia it was discovered in, this rare coffee variety carries an incredibly structured sweetness. The plant itself is low yielding, making Wush Wush a hard coffee to find.
Our varietal was masterfully produced by Oscar Aparicio at El Zafiro Farm in Colombia. Coffee cherries are picked and sorted by hand before undergoing wash processing. Next comes pulping and a 24 hour fermentation. During the final stage, coffee dries in the sun for 18 days, being turned every hour for evenness.
